One of my favorite
veg head dishes, especially for the summer, is Wheat Berry Salad. My mom found this recipe on the back of the Wheat Berry packaging and it is absolutely delicious. It looks and sounds weird, and everyone is always afraid to try it, but trust me on this one! It's incredible.
Ingredients:
Salad
1 cup cooked Wheat Berries
1 cup Navy or White Beans (I prefer white)
1/2 cup Green Onion, chopped (I don't usually use this)
1/2 cup celery (diced)
1/2 cup tomato (diced)
Vinaigrette
1/2 Cup Olive Oil or Canola Oil
2. Tbsp Lemon or Lime Juice
2 Tbsp White Wine Vinegar
2 Tbsp Parsley (chopped)
1 Tbsp Honey Mustard
2 Tbsp Shallot (minced)
1/4 tsp Sea Salt
1/4 tsp Ground Black Pepper
Directions:
Cook Wheat Berries according to directions on package. (These take about an hour to cook, so just keep that in mind)
Mix the vinaigrette by combing all the ingredients.
Add the Wheat Berries and other salad ingredients
Let chill over night

You can serve this over lettuce or spinach. I usually just eat it as a side dish...or sometimes as my whole lunch or dinner. I also always double (or triple) the recipe so that I have a bunch in my fridge at all times. It's the perfect dish for a hot summer night or a cookout.
