A Gift From Me and Oprah to You

Monday night, I decided I needed a drink in hand while catching up on my DVR. I ran to the store and got a bottle of Pinot Grigio and then decided I wanted a little something more. Enter Oprah's White Wine Sangria. It was seriously one of the best Sangrias I have ever had (there was an incident at a tapas restaurant, but that is a story for another day)...

Enjoy!  
Ingredients
  • 1 pint strawberries , hulled and halved lengthwise
  • 2 oranges , sliced into 1/4-inch-thick rings
  • 2 lemons , sliced into 1/4-inch-thick rings
  • 3 peaches , pitted and cut into 8 wedges
  • 3 bottles white wine (dry to semidry), such as Pinot Grigio or Chardonnay
  • 1 liter sparkling water
  • Ice

Directions

Place all fruit in a large pitcher or bowl, add wine and allow to sit at room temperature 4 to 24 hours. When ready to serve, add sparkling water and ice. Serve in a bowl with a ladle (make sure there's fruit in every serving).

Adventures of Manda and Mr Howie

Happy Thursday! Hope everyone is having a great week! Since last week's 30 Miles in 30 Days linkup, I have added another 14.35 miles to my total, making my overall total for June 31.81 miles. I have had some serious shin splints this week and am in desperate need of new sneakers so running has not been the most comfortable thing in the world, but I'm managing. 


The second half of the month is always when I get burned out, so here is some motivation to help you out, if you are anything like me!

Hippie Food

One of my favorite veg head dishes, especially for the summer, is Wheat Berry Salad. My mom found this recipe on the back of the Wheat Berry packaging and it is absolutely delicious. It looks and sounds weird, and everyone is always afraid to try it, but trust me on this one! It's incredible.


Ingredients: 
Salad
1 cup cooked Wheat Berries
1 cup Navy or White Beans (I prefer white)
1/2 cup Green Onion, chopped (I don't usually use this) 
1/2 cup celery (diced)
1/2 cup tomato (diced)
Vinaigrette 
1/2 Cup Olive Oil or Canola Oil 
2. Tbsp Lemon or Lime Juice
2 Tbsp White Wine Vinegar
2 Tbsp Parsley (chopped)
1 Tbsp Honey Mustard
2 Tbsp Shallot (minced)
1/4 tsp Sea Salt
1/4 tsp Ground Black Pepper
Directions: 
Cook Wheat Berries according to directions on package. (These take about an hour to cook, so just keep that in mind)
Mix the vinaigrette by combing all the ingredients.
Add the Wheat Berries and other salad ingredients
Let chill over night

You can serve this over lettuce or spinach. I usually just eat it as a side dish...or sometimes as my whole lunch or dinner. I also always double (or triple) the recipe so that I have a bunch in my fridge at all times. It's the perfect dish for a hot summer night or a cookout.
